Green olive oil
Green olive oil is oil produced relatively early, before the olives ripen,
which is unripe and green. The olives are harvested by hand in mid-October
and processed in the same or the next day too. Green olive oil not
called all the fresh oils, only one produced from unripe olives.
Has bright green color due to chlorophyll of unripe olives
which give the largest green olive oil antioxidant properties. Varies
the taste of extra virgin olive oil as it is intensely bitter and somewhat
spicy flavor with fruity aromas of freshly cut from unripe olives.
Green olive oil keeps for a few months of the properties, so it is not available
throughout the year. The stronger the characteristics are apparent from the production,
and November to March. As time goes green olive oil loses its intense
flavor but no nutritional values. Pure green olive oil not pass
no processing or filtering, after some time display a
precipitate (berries) in the bottom of the container, which is a natural oil residue
and indicates the purity of green olive oil.
It contains all the vitamins and provitamin of oil, minerals and polyphenols
protecting cells from oxidative stress, active oxygen and free radicals.
